The Truffle
Also known as Périgord truffle or French black truffle, the fresh black truffle
(Tuber melanosporum Vittad.) is a winter delicacy harvested from 15 November to 15 March. It is prized for its intense aromatic profile, combining earthy depth with a refined, slightly fruity character. The flavour is powerful yet balanced, which has earned it the name “sweet black truffle” among connoisseurs.
It is important to distinguish it from the Ordinary Black Truffle (Bagnoli truffle), which is marked by a sharp, phenolic aroma, bitter taste, and significantly lower gastronomic value. The fine black truffle’s superior organoleptic qualities make it a true luxury product — and a refined gift for those who understand it.
