The scorzone is a type of truffle similar to the common black one.  Black-gray in color and very warty on the outside, it has white pulp that turns brown with maturation. The scorzone has a typical smell: when it reaches maturity it recalls that of the hazelnut. It is harvested between June and September, which is why it is also called the “summer truffle”. From the point of view of chemical and nutritional characteristics it is very similar to the prized black truffle.
